Our wines
History
A wine’s story begins with the harmony between the grape variety and its terroir. You have to know your site or at least try to understand it on the one hand, while on the other hand know the reactions and expectations of the vine in order to find the balance to achieve this alchemy. It is this harmony that will enable you to make an authentic wine. We are not interested in fads and clichés rather we are seeking an almost spiritual dimension. It seems to me this is where the essence of a good wine is found.
Fermentation
The transformation of the harvest into wine must be focused on the basic characteristics of the grapes. Winemaking comes down to assisting the metamorphosis of quality grapes into a fine wine. The watchword is not to fight against nature, nor to make technological wines (transformation of sweet juice into a hydro-alcoholic drink) but to make wine that reflects its terroir.
Les cépages doivent déjà être dans un climat qui leur correspond. En effet, en fonction de leur origine, le cycle végétatif et la morphologie de la plante sont calés par rapport aux caractéristiques du régime climatique (semi-océanique pour nous). De plus dans chaque famille, ils ont des réactions bien différentes face à l’alimentation hydrique, ainsi le chenin blanc ou le cabernet sauvignon apprécieront des sols très superficiels rocailleux alors que le cabernet franc aime avoir la « tête au soleil » mais « les pieds au frais » c’est pourquoi les sols calcaires du Crétacé lui réussissent si bien.
