La recherche de raisins de belle maturit\u00e9 donne \u00e0 ce vin blanc sec son expression aromatique si caract\u00e9ristique. Ce sont les ar\u00f4mes de fleur d’oranger, de citronnelle et les notes exotiques du litchi qui dominent, puis l’on per\u00e7oit le fumet et la brioche. Ces parfums nous reviennent en bouche, dans une structure vive et opulente \u00e0 la fois, pleine de finesse et de rondeur.
Plut\u00f4t appr\u00e9ci\u00e9 sur le fruit\u00e9 de sa jeunesse, il devra \u00eatre servi \u00e0 une temp\u00e9rature de 6\u00b0C \u00e0 8\u00b0C, en accompagnement de vos poissons brais\u00e9s, coquillages et crustac\u00e9es.<\/p>

Nous effectuons des pr\u00e9l\u00e8vements pour d\u00e9terminer la maturit\u00e9 du raisin (richesse en sucres et acidit\u00e9). Les jus sont d\u00e9gust\u00e9s afin de suivre l’expression aromatique. Nous recherchons une belle maturit\u00e9 afin de privil\u00e9gier les notes fruit\u00e9es et exotiques plut\u00f4t que v\u00e9g\u00e9tales.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

La vendange subit une mac\u00e9ration pr\u00e9fermentaire d’une nuit, afin d’extraire le fruit\u00e9 de la pellicule. Les jus est obtenu par un pressurage doux. La fermentation alcoolique achev\u00e9e, les lies sont brass\u00e9es pendant plusieurs semaines afin d’apporter complexit\u00e9 et gras au vin.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
