Rocca<\/span> Nigra<\/span> exprime la typicit\u00e9 de son terroir et la plante qui lui est li\u00e9e. Le Cabernet Sauvignon, c\u00e9page sobre, adore les sols rocailleux des schistes ardoisiers et des gr\u00e8s armoricains. Il y donne des vins \u00e0 la couleur intense et profonde. Le nez est domin\u00e9 par les ar\u00f4mes de fruits noirs, de bois de r\u00e9glisse et de torr\u00e9faction. La bouche est g\u00e9n\u00e9reuse, puissante et velout\u00e9e.<\/span><\/span><\/p>\n

Servi \u00e0 temp\u00e9rature ambiante apr\u00e8s une bonne ann\u00e9e de repos en bouteilles, il accompagnera avec tenue les grillades et les viandes en sauce y compris les mets fortement \u00e9pic\u00e9s. Un carafage \u00e0 temp\u00e9rature ambiante lui sera tr\u00e8s profitable.<\/span><\/p>\n

Il provient des clos des Collinets, du Goupil, des Guenneries et du Cormier. Ces coteaux rocailleux bien expos\u00e9s de schistes ardoisiers et de gr\u00e8s armoricains de l\u2019\u00e8re primaire (ordovicien et silurien) n\u00e9cessitent un c\u00e9page qui supporte une alimentation en eau r\u00e9duite : le Cabernet Sauvignon. Les racines de la plante sont oblig\u00e9es de descendre en profondeur dans les failles de schistes pour y puiser leur nourriture.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

ROCCA NIGRA est un vin rouge issu de raisins r\u00e9colt\u00e9s tr\u00e8s m\u00fbrs. La maturit\u00e9 est contr\u00f4l\u00e9e plusieurs fois par semaine afin d\u2019atteindre une maturit\u00e9 ph\u00e9nolique compl\u00e8te.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

La vendange \u00e9grapp\u00e9e subit une mac\u00e9ration longue (40 \u00e0 50 jours), n\u00e9anmoins la d\u00e9licatesse est pr\u00e9f\u00e9r\u00e9e \u00e0 l\u2019extraction violente. Au d\u00e9part : plusieurs remontages, d\u00e9lestages et brassages sont r\u00e9alis\u00e9s puis le marc est totalement immerg\u00e9. Nous privil\u00e9gions la douceur et le temps.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
